Move this chef knife around in the light, and you'll know exactly why it is called "Flow." The blade, forged from 224 twisted layers of pattern-welded steel, shimmers like rippling water, and sculpted, curving grooves connect the angular facets of the octagonal handle in a striking and attractive manner.


The saber-ground blade incorporates a wide "fuller" that arcs from heel to tip, parallel to the edge, which lightens the knife and helps with food release.


The blade was forged from 15N20 and 80CRV2 carbon steels. The bolster is stainless steel with Richlite and stainless spacers. The handle is stabilized Indian Rosewood.

The smooth, ergonomic handle was shaped from stabilized black walnut burl with a stainless steel spacer and a Richlite bolster.


This blade was forged from 224 layers of twisted 15N20 and 80CRV2 high-carbon steel Damascus. Like all carbon steel blades, it will darken and develop a patina with use. Always hand wash and dry after use to prevent the blade from rusting.

Ironwood and Rosewood Mosaic Gyuto

Built for the serious chef with a taste for elegance, this knife blends form and function in equal measure. Don't be too distracted by the mesmerizing mosaic Damascus blade: the convex gind and ultra-thin edge are perfect for slicing and chopping with precision and speed. The integral bolster adds strength and a satisfying weight to the transition between handle and blade. Desert ironwood burl and Indian rosewood are a luxurious combination for the handle of this chef knife, and a curved bronze spacer between them adds a moment of visual and tactile appeal.

Monarch

The bold pattern welding, gold overlay, reeded handle, and deadly design of this knife are sure to make an impression on all who behold it. "Monarch" is the fruit of a collaboration between Jordan LaMothe, Jeremy Yelle, and Ulysse Robert, and it combines disparate historical styles in a way that sets it apart from any other knife available today.

Here's the story of how it was made:

Early in 2024, Jordan, Jeremy, and Ulysse agreed to collaborate on a bowie knife project, loosely inspired by nineteenth century Sheffield designs. They traded sketches and ideas for the piece, and Jordan created a scale drawing and template for the knife. Meanwhile, Jeremy and Ulysse spent a couple of days together designing, welding, and forging the pattern-welded billet for the blade. Once the billet was forged, Jordan joined the other two for a week at Jeremy's shop in Quebec, Canada, where the three smiths took turns tackling various aspects of the construction. Jordan forged the shape of the blade, Jeremy ground it to its final dimensions, Ulysse machined the precisely-fitting handle components, and all three worked to sculpt the handle, guard, spacer, and pommel.

After a week of work, Jordan brought the nearly completed knife back to his workshop in Hebron, NY. There, he put the final finishing touches on the handle and applied the floral designs in gold koftgari, a technique he learned from master craftsmen in India.


The blade was forged from 1075 and 15N20 high carbon steels. The guard and pommel nut are hot-blued mild steel with 24K gold koftgari overlay. The spacers are antique wrought iron, etched to reveal the crystalline grain structure, and the handle is reeded African blackwood.
